Chimichurri dressing:
1/4 cup fresh parsley
1/4 cup fresh cilantro
1 garlic clove
1 tablespoon Chimichurri spice
2 tablespoons white vinegar
1 tablespoon sherry vinegar
2 tablespoons vegetable oil
Optional: add juice or 1 or 2 limes
Cut the parlsey, cilantro and garlic into small chunks and Mix all ingredients together, pour into jar with a good seal and shake before using.
This versatile dressing can be used on meats, vegetables, salads or rice.
Avocado Chimicurri Recipe:
1large avocado
ΒΌ cup cider or red wine vinegar
1 teaspoon Chimichurri Spice
Olive oil
Mix ingredients together and serve it multi cultural Caribbean style on an Italian bruchetta.
