Cuban Mojo recipe:
The authentic mojo is made with juice from sour oranges. It does still have the orangey taste, but it is very acid and tart.
This sauce goes great with Cuban sandwiches, fried plantain chips, grilled seafood and meats. Use as a dip or marinade.
1/3 cup olive oil
1/3 cup lemon juice
1/3 cup (fresh) orange juice
2 teaspoons cuban spice
Hot oil in a saucepan over medium heat.
Add the Cuban Spice and juices. Bring to boil.
Allow mixture to come to room temperature before serving.
Sofrito is a versatile tomato based puree which is used as the base of many typically Cuban dishes.
4 tablespoons olive oil
2 medium green peppers
1 large onion
2 large tomatoes
1 bay leave
2 teaspoons Cuban Spice
Cherry to taste
Chop up the vegetables. Slowly sauté all ingredients in the olive oil until the vegetables are limp. Let simmer for a while to blend all flavors. Great for use in soups, stews, rice etc.
